Rave Apple Cheddar Breakfast Biscuit

An easy and healthy alternative to the grab-n-go breakfast sandwich incorporating the back-to-school favorite, Rave® apples!

Recommended Apple Variety: Rave®, Kanzi®

Ingredients

For the Biscuits
 ¾ cup Rave Apples[Shredded]
 2 cups All-Purpose Flour
 2 tsp Baking Powder
 ½ tsp Baking Soda
 1 tsp Granulated Sugar
 ½ tsp Kosher Salt
 ½ cup Unsalted Butter[Cut into tablespoons]
 1 cup Buttermilk
 ¾ cup Shredded Sharp Cheddar Cheese
For the Eggs
 12 Eggs
 2 tbsp Milk
 ½ tsp Salt
 ½ tsp Pepper
Other Ingredients
 8 Pieces of Bacon
 8 Slices of Cheddar Cheese

Biscuit Instructions

Preheat the oven to 450 degrees F. If using a dark non-stick baking sheet, lower heat to 425.

Mix together flour, baking powder, baking soda, sugar, and salt. Mix in butter with a pastry cutter, forks, or your hands until the mixture resembles coarse crumbs. Add cheese, apples, and buttermilk. Stir until just moistened. Do not over-mix.

Grease a baking sheet. Using a 2/3 measuring cup, fill almost to the top and drop on the baking sheet.

Bake for 15 minutes on the center rack of the oven or until golden brown on top. 

For the Eggs

Preheat the oven to 325 degrees. Generously grease a 9" x 13" pan.

Whisk the eggs, milk, salt, and pepper.

Pour the egg mixture into the greased pan and bake for 18-20 minutes. Once the center is set, remove from the oven.

Allow to cool then cut into 8 even squares.

To Assemble

Cut each biscuit in half and top with egg, and your choice of cooked ham, bacon, or sausage patty, and a slice of cheese.

To enjoy immediately: Heat the composed breakfast biscuit in a 350-degree F oven until the cheese is melted, about 5 minutes. 

To freeze: Wrap each sandwich individually in aluminum foil and place it within a freezer-safe bag for up to one month. 

To reheat: Place the wrapped sandwich in a 350-degree F oven for 10-15 minutes or remove from aluminum wrap and heat in the microwave for 1-2 minutes.
