Kanzi® Apple Crisps

Ingredients

2 Kanzi® apples
½ tbsp tbsp icing sugar

Directions

Pre-heat the oven to 248 °F.

Wash your apples then very finely slice them horizontally into thin rounds, going straight through the core, and picking out any pips.

Place them on a non-stick baking tray and dust with icing sugar. Place in the oven for 3 hours until completely dry. They will still be pliable until they cool.

After they have been in the oven use a pallet knife and allow them to cool on a wire rack where they will become crispy. Store in an airtight container. These are perfect to serve as a healthy alternative to sweets and crisps as drying them intensifies their natural flavour and sweetness.

Michigan Apple Salsa

Ingredients

2 medium red Michigan Apples
2 tbsp lime juice
½ cup chopped orange segments
½ cup finely chopped onions
½ cup finely chopped green pepper
1 finely chopped jalapeno
1 1 clove garlic, minced
2 tbsp chopped fresh cilantro
1 tbsp cider vinegar
½ tsp ground cumin
1 tsp vegetable oil

Directions

Core and dice apples into 1/4 inch pieces. Toss immediately with lime juice.

Stir in remaining ingredients.

Chill 2 hours before serving over fish, chicken or turkey.

Cinnamon & Honey Apple Dip

Ingredients

1 (8-ounce) package cream cheese, softened
3 tbsp honey
1 tsp ground cinnamon
1 tsp freshly grated ginger
apple slices
Pecans
Graham crackers

Directions

In medium mixer bowl, place all dip ingredients.

On high speed, mix dip until smooth and creamy (60 to 90 seconds).

Serve with assorted apple slices, pecans and favorite crackers.

It’s a sooo Gouda Apple Dip

Ingredients

2 oz Gouda, cut into 1/4 inch cubes/pieces
1 Gala apple, cut into 1/4-inch cubes
2 tbsp toasted pine nuts
¼ tsp tsp Dijon mustard
2 tbsp apricot preserves or marmalade
Pinch of kosher salt & black pepper
Gala apples, sliced thick for dipping

Directions

Place apples and cheese in small bowl. Add mustard, pine nuts, preserves and seasoning. Stir.

Let mixture rest for a minute for the flavors to blend. Serve with thick Gala apple slices or crackers—or both!

Apple-Loaded Shortbread Cookies

Ingredients

1 lb unsalted butter, room temp
1 ¼ cups granulated sugar
1 ¼ tsp vanilla extract
4 ¼ cups all-purpose flour, sifted
2 tsp kosher salt
1 ⅓ cups Empire apples, skin on, small dice

Directions

In stand mixer, add butter and sugar. Blend with paddle attachment or electric beaters until mixture is light yellow.

Add vanilla. Sift in flour and salt. Add small pieces of apple and continue blending, using hands, until incorporated.

Remove dough, use a little flour (if needed), and work into a long roll (dough log). Wrap dough in plastic and chill for 45-60 minutes until butter sets.

Pre-heat oven to 350 degrees. Remove dough from fridge. Slice into ½ inch circles and place onto ungreased baking sheet. Bake for 20 minutes, or until golden. Remove from oven and cool. Cookies will harden as they cool.

Top with Apple Cider & Mascarpone Frosting.

Crunchy Apple Salsa with Grilled Chicken

Ingredients

Apple Salsa
2 cups apples, halved, cored, and chopped
¾ cup (1 large) Anaheim chili pepper, seeded and chopped
½ cup chopped onion
¼ cup lime juice
Apple Marinade
¼ cup dry white wine
¼ cup apple juice
½ tsp grated lime peel
½ tsp salt
dash of pepper
4 medium boneless, skinless chicken breasts

Directions

Combine salsa ingredients and mix well; allow flavors to blend about 1/2 hour. Serve over or alongside grilled chicken. Makes 3 cups salsa.

For grilled chicken, combine marinade ingredients and pour over chicken breasts. Marinate for 20 to 30 minutes.

Drain and grill over medium-hot coals, turning once, until chicken tests done.

Chocolate Fondue

Ingredients

¾ cup heavy whipping cream
6 oz bittersweet chocolate, chopped
cup mascarpone cheese
1 tbsp unsalted butter
1 tbsp dark rum
1 tsp vanilla
1 apple, cored and cut into 1-inch pieces
½ cup dried apple slices

Directions

Heat a fondue pot until warm.

Heat the whipping cream in a medium saucepan over low heat until bubbles form along the sides of the pan. Add the chocolate and continue cooking, stirring occasionally, until the chocolate is melted. Stir in the mascarpone cheese and butter. When the mixture is smooth add the rum and vanilla.

Pour into the fondue pot and serve with apples. Adjust the heat to keep the mixture smooth but do not let the chocolate boil.

Caramel Apple Bites

Ingredients

2 Fuji apples
1 Caramel Dip
Crushed pretzels, popcorn & walnuts
6 inch skewers

Directions

Peel the apples and use a melon baller to make apple balls. Stick a skewer in each apple ball and arrange on a plate.

Serve with a bowl of caramel and bowls of crushed pretzels, popcorn, and walnuts.

Dip the apple balls in the caramel and toppings and enjoy!

Mini Caramel Apple Tarts

Ingredients

Crust
1 cup dates, pitted
1 cup toasted walnuts
½ tsp cinnamon
Pinch of salt
Filling
4 tbsp Caramel Dip
2 Michigan Apples
1 tbsp lemon juice

Directions

Soak the dates in warm water until softened, about 30 minutes. Drain and put in a food processor with the walnuts, cinnamon and salt.

Pulse until the mixture begins to come together, scraping down the bowl every once in a while.

Divide the dough among 4 mini tart pans, pressing the mixture firmly into the pans to form a crust.

Spread one tablespoon of the caramel in the bottom of each crust using a small spoon or spatula. Chill in the refrigerator until ready to eat.

When ready to serve the tarts, cut the apples into thin slices and toss with the lemon juice in a large bowl.

Arrange the apples on top of the caramel and serve!

Peanut Butter Apple S’mores

Ingredients

2 MI apples, cut into 1/2 in. slices
6 oz marshmallow cream
4 oz dark chocolate bar
6 oz chunky peanut butter

Directions

On a cookie sheet or plate, lay out your apple slices.

Spread marshmallow cream and chocolate on half of apples.

Spread peanut butter on remaining apples. Sandwich each pb-apple with a marshmallow/chocolate apple and enjoy.
