Rave Apple Chicken Salad on Pita

This fresh apple chicken salad is ideal for meal prep with kid school lunches and quick dinner plans during the busy work week. The Rave® apples add a snappy zing to this recipe and give it that extra kick of energy you need to get through the day.

Ingredients

 ¼ cup Plain Greek Yogurt
 ½ cup Mayonnaise
 1 tbsp Lemon Juice
 1.50 tsp Curry Powder
 ½ tsp Kosher Salt
 ¼ tsp Black Pepper
 3 cups Cooked Chicken**[Diced]
 1 Rave Apple[Medium Diced]
 ½ cup Golden Raisins or Regular Raisins
 ¼ cup Red Onion[Diced]
 2 tbsp Green Onion[Green Portions Thinly Sliced]
 2 tbsp Fresh Cilantro[Roughly Chopped] Can also use Parsley
 4 Pitas[Whole Wheat or White]
 2 cups Fresh Greens

*Grilled Chicken is preferred as it adds a nice flavor. You can also use rotisserie chicken for this recipe.

Directions

Mix together the yogurt, mayonnaise, lemon juice, curry powder, kosher salt, and black pepper in a large bowl.

Add the chicken, diced apple, raisins, red onion, and cilantro to the bowl. Stir to combine.

Add chicken salad and fresh greens to each pita and enjoy!
